Kaffeost is the Sami tradition of adding cheese to their coffee
The Sami are the native peoples of many Nordic countries
A traditional cup of kaffeost begins with cubes of cheese placed at the bottom of a kuksa (wooden mug). After pouring the boiling coffee inside, drinkers can spoon the softened chunks out as they sip, or enjoy the little cheesy dregs left at the bottom of the wide-mouthed mug.
The dried cheese add to the coffee is called juustoleipä (pronounced: hoo-stah-lee-pa) It absorbs the steaming brew, softening without melting, like a rich, moist cheese sponge.
Juustoleipä translates to “cheese bread,” which not only refers to its dry and sturdy texture, but also its culinary use as a sort of bread-like vehicle for jam, syrup, and, of course, coffee. To make the cheese, milk-once reindeer milk, now often goat or cow milk-gets curdled, baked, and dried into thin rounds. This process not only allows for the cheese to be preserved for up to a year, but invites special preparations when it is ready to be consumed, one of which is kaffeost.
Juustoleipa is also known as Finnish squeaky cheese
Many compare the taste of juustoleipä to Canadian cheese curds, brie, and most notably, halloumi. It’s mild, with barely any tang or sourness. For those seeking more accessible options, any of these are acceptable.

It is not only the Sami who add cheese to their coffee. This is a practice that is common across many Nordic countries
It makes sense on a couple of levels
Nordic countries account for the top 6 out of 10 in terms of coffee consumed per capita. Of note, Canada is number 10 on this list and consumes just more than half what Finland, the number 1 country does
Coffee is an essential part of the culture in all the Nordic countries. Perhaps the weather plays a role. It's cold and dark much of the year, so coffee is perfect for waking you up and warming you up.
Another reason may be that coffee was more affordable than alcohol. Back in the 1800s, when Scandinavia was a relatively poor part of the world, higher taxes on alcohol and alcohol production meant the Scandinavians had to find themselves another vice to occupy themselves.
Nordic people who spend much of their time outdoors, like the Sami, have a need to consume additional calories to maintain their energy levels
Kaffeost provides that opportunity by combining their coffee with the dried juustoleipa which is softened by the hot beverage

    I’m able to get so many types of cheese here in California. There was a Quebecer who had a poutine place in my neighborhood, it was delicious. When you put the cheese into your cup, I thought that some chicken broth would be nice. I’ll have to try some cheese in my coffee.     Great Video Mark,,,, Kinda of funny about Fire Maple stoves,,, I own their large Maverick wood stove. And ,, like the one you’ve just tested,, I had to modify it a little. I cut two heavy gauge pieces (with holes throughout) to cover the Two Large side feed ports. I always add my fuel from the top,,, the modification was no problem,,, and I knew it would be needed even before I purchased the stove. The one you tested definitely needs something underneath to protect the Forest ground ,,,, as You started the fire the flames were really strong, coming from the bottom. All in all,, Fire Maple has some good products,, just occasionally needing some tweaking,,,👍👍

    I have the Firebox Ti stove. I like the hinged construction so I don’t have to figure out which panel fits where. The maker recommends a couple small fires to burn in the stove. Perhaps on the Firemaple this would have prevented the warping you mentioned. I’ve since had many large fires in mine and it has never warped.

    Im surprised they didn't predrill 2 holes, its pretty much a blank... i put scales on mine and it made it so much more comfortable to work with for extended time.

    Reminds me of Keith Titanium stove. Please check out the Skyemac large stove. Double the stove size, great for cooking, portable fire pit. I've had well over 200 burns, still perform excellent.

    So I tried to take a look at the company, but got nothing, so I assume it’s Chinese. There are only so many basic shapes for stoves, so if one looks similar, how can you blame them? However, it’s all about the ventilation. If a Chinese company (or any company) just 100%rips an idea off, or if they sort of take an idea, and make useless changes with no testing, then it really pisses me off. But if they actually do some experimentation, put some of their own effort to make it better, then I don’t care if it looks similar. That giant hole, and the fire plate designed to start secondary fires looks like a million Ali express stoves and doesn’t impress me……plus, though puzzle stoves do tend to save weight, you already know how much I hate them 🙂 Good review as always, but on a side note, the sound is kinda off. Is there an issue with your newish mic, or something about the upload?…..or maybe my feed

    Thanks for this honest and helpful review. I use mine as an overnight bag, for instance I returned yesterday from a 2 day hike in the Scottish Borders, staying in a bothy for 1 night. I have also found it big enough to use for tented trips. Scotland is a wet country, and the pack is not very water resistant, so I make sure that i use in in conjunction with dry bags of various sizes.

      @@MarkYoungBushcraft I am lucky, as, in Scotland, there is a "Right to Roam" law, that means that you can camp or walk where you like, whether or not the land is private. They also give us oldies a bus pass, which enables us to ride the local busses as well as our equivalent of your "Greyhounds" free, throughout Scotland. I take plenty of trips!

    G'day Mark, like the size and I was going to commend it for the flat and lightweight carry, though on reflection, I'd sacrifice that for a hinged design and an ash pan. The name suits it, however, a fortress without a gate ......... aint a proper fortress ; ) .... so I reckon a door, perhaps with rotary type adjustable ventilation, would be worth paying extra for.     If I can offer an observation. It seems to me that the floor could be reversed when using the stove in the alcohol burning config. The floor indentation would then be indented upward thus providing perhaps approximately a 1/4 inch height gain for a more optimal alcohol stove burn distance from cooking vessels.     I live in AZ and in with the Ponderous Pine trees. In the spring my vehicles are covered in a yellow powder and was curious if this was at all easy to gather since these trees are tall and I am unable to collect them from the branch….unless I get a long ladder. P.S. is this pollen good?

    Very good Mark, nice lightweight little wood stove. I like the idea of a bit smaller feed opening as well. The height from the burn plate to the bottom of the opening looks pretty thin too. I'm thinking you would get a good amount of hot coals rolling out of it. Thank you for sharing!

    I have one like that same titanium but mine might be a bit smaller. I love it! My idea was light weight. I carry this and a titanium alcohol stove. My idea is alcohol for coffee morning snack. Wood for dinner/lunch. I don't want those loud gas stoves. I don't like a gas can i cant tell what's in it. I like titanium not just because its light mostly because it cools in seconds. My wood stove was under $20. On Amazon its been amazing. My old wood stove is great but weights about 5lbs. It's another indestructible model but i don't believe weight is worth the extra size. Titanium is the only way to go unless your car glamping. I would like to get the fire maple size one. Love your indepth reviews. You are one of the few people i feel isn't trying to sell me stuff. Many seem to do it so they can get the latest and greatest for free. Really appreciate all the work you put in. Have a blessed day Mark. Sorry for the long comment.

    I have come to the conclusion that you have to accept the warping of titanium in order to have the benefits of its lightness. I have both the stainless and titanium versions of a leading brand of stove. The design is the same, but the stainless one never warped while the titanium one needs bent back into shape every couple of burns, and its the stainless one that gets the fiercest burns too. I have also seen recommendations that hot tent stoves with the roll up titanium chimneys need a hot "burn in" to help the chimneys learn the right shape. Titanium just is what it is.

      Silly chilly? This was probably a month ago, and we can have cold, or warm, depending on the year. But it was 20c today just east of Mark today, and we’re getting 25c or so this coming long weekend. We share crazy weather with you guys. If you don’t like the weather, close your eyes for a few seconds.

    Thanks for another highly informative and detailed video Mark. You reviewed the Uberleben Stoker that I actually purchased and will continue to use due to its solid construction and ease of assembly , not to mention it is very efficient. This stove seems a bit too fiddly for my intersts. Thanks again for all you do!

      No, it is a copy of the Evernew but without the wick. It takes longer to bloom but then runs longer. Not as good in cold weather. Thanks for commenting

    G'day Mark, I like it, though I'm not really sure why ; ). Maybe because I've never seen such a small seax design before, nor can I remember one with an angled handle. I do dig the scale pattern, a good 14C is fine by me and they sure didn't mess about with the sheath. To be honest; money no object, reckon I'd have one just because it's so unusual/interesting.     I've come to see a bushcraft knife as one for survival in a wooded environment, and a survival knife is one intended for survival in any (as many) potential environment(s). The only other factor is typically, a survival knife is one you were forced to use, while a bushcraft knife you generally use voluntarily.

    What a wonderful review, thanks a lot! I'm really appreciating how much time and efforts you invest in such a video, respect! I think this (kind of) stove isn't for me. It is for sure a fantastical thing and highly performant etc, but just not for me. I'll tell you my three main reasons why: - it is electrical, and everything electrical has an end of life which comes usually unforeseen and always when you use the item. Of course in case it happens you can make any other type of fire so you would survive, but... Btw I'm not aware whether that thing could even been repaired (and if so, who would do that) or has to be simply given for recycling (if that is even possible), if the fan stops working or any transistors or whatever is there break. - it delivers way too much of heat for my purposes. Means I'm not only boiling water but usually I use my stoves for cooking, what is in average maybe at 20% of the time using medium/high heat and 80% just simmering. I bet even in lowest mode I could not use it as I'm used to work with my other stoves. And my rice, dals, eggs etc. would surely burn in. - I do simply not see a need for such a stove in my use scenarios. Besides being too overpowered in some sense, at least what concerns simmering, and such being not even useful for me, it is simply too over in general. It is for me way too costly, way too overbuild, and simply not required to be so. For me, every DIY Ikea Hobo delivers the functionality I need, and because of the simmering issue maybe even better compared to that thing. It is like using a Ferrari on Indian roads, when a little Suzuki would do it and could pass most road humps and potholes maybe even better than a Ferrari. And please don't misunderstand me: I'm happy for every Ferrari owner (or driver) and I love always to see and hear these vehicles, they are totally fantastique and great and a miracle of engineering, but I myself would never consider to get me one for my use cases. Let me close with a little tipp concerning wood stoves in winter: you don't need a fan for a good burn. It helps to use in the beginning a blowtube (I use since decades a collapsible one, which I carry in cold environments in my pocket near to my body) until the stove is nice hot, then it burns usually without further help from alone. At least when there is a good chimney effect. Thanks again, and best regards, Robert
